A fun-filled festival that’s packed with positivity

It’s getting on for almost three years since Claire Clements popped into the Radio Newark studio to announce the launch of her brand new Positively Empowered Kids Festival.

And now she’s back on Girls Around Town next weekend to share some of the details of the next one!

Of course, she’s been behind the mic or on the phone to June several times since that initial on air chat, with news of all the other events and activities she’s been running to help kids build their confidence and understand the importance of gratitude and positivity…

And most recently to talk to about her best-selling book, Put On Your Positive Pants, an uplifting and empowering story that introduces you and your children to a variety of ways to boost their mood when they’re feeling sad.

But putting together the 2022 festival is top of her list right now and if the one back in 2019 – packed with everything from yoga, circus skills and wellbeing crafts to making healthy food, family massage and tai chi – is anything to go by, those kids are in for a day full of fun in September!

Emma’s Shrove Tuesday treat

Here it is, as promised on Girls Around Town this morning – Emma Porter’s recipe for her simple Savoury Pancakes for you to enjoy on Shrove Tuesday

A few minutes to prepare the ingredients, a few more to cook each pancake and they’re good to go – and just as good to eat!!

Savoury Pancakes

  • Servings: Makes 2 large or 4 small pancakes
  • Difficulty: Easy

    Ingredients

      1 cup of plain flour
      1 cup of milk
      1 egg
      1 onion, chopped
      1 clove of garlic, chopped
      3 tbsp of butter for cooking
      100g (4oz) of grated cheese

Method

    1. Begin by making the batter for the pancakes by mixing together the flour, milk and egg until smooth, then set to one side.
    2. Using a small frying pan, sauté the onion and garlic in 1 tbsp of butter until soft, then set to one side in a bowl.
    3. Using the same frying pan, add 1 tbsp of butter and melt before pouring in some of the batter mix.
    4. Cook until the batter begins to solidify on top – flip it over and continue cooking for another minute or two until golden brown
    5. Slide the pancake onto a plate and add some of the garlic and onion before adding 2 tbsp of grated cheese.
    6. Fold the pancake in half and return it to the pan for another minute or two to melt the cheese.
    7. Repeat until you have used all the batter.

It’s one of people’s most basic needs and, for many of them, perhaps one of their biggest worries…

Not least among them author Emma Porter, this week’s guest on Girls Around Town, who’s seen and experienced first hand just how debilitating anxiety about not having enough to eat can become.

Inspired by her passion for food security, in her recently-published book Reclaiming Food she sets out to demonstrate that eating well doesn’t have to cost an arm and a leg, although you do have to forego convenience, change some of your shopping habits and look at different ways of sourcing your food.

And while many folk view cooking as beyond their skillset, in the book she sets out to demonstrate that it simply isn’t!

Joining June in the studio from just after 11am on Sunday, Emma – whose books are published under the nom de plume Emma Kathryn – will be explaining how easy it is to reclaim your food security by cooking simple but satisfying meals from scratch using fresh produce and raw ingredients.

She’ll also be sharing one of the recipes from her book, which covers everything from soups, snacks and sweet treats to bread, biscuits and bubble and squeak…

With Shrove Tuesday not too far away, it’s a particularly appropriate choice but you’ll have to tune in to 107.8FM or listen on the apps or online this weekend to get the full details in plenty of time to give it a go yourself!
